Low Carb Spinach and Eggs Muffin

Spinach is my favorite green food.  I love sauteed spinach, spinach salads, spanikopita,  spinach dip…you name it, I probably like it if spinach is in it.  I can’t say I have always enjoyed it.  But several years ago I read a book about the healthiest foods… Guess which one was top of the list: SPINACH.  So I started eating it for pure health benefits and the taste grew on me to a point now that I prefer it as a side to just about anything. But my favorite way to enjoy spinach is freshly sauteed into scrambled eggs for a delicious low carbohydrate, high protein meal.  So I experimented with turning my favorite spinach meal into something my son would willing devour.  It worked because his cute little response was “Mmmm” after his first bite!

What I used:

  • 3 eggs
  • 4 egg whites
  • 1 cup of freshly sauteed spinach
  • 1/2 cup shredded mozerella cheese
  • 1/4 cup shredded parmesean cheese
  • 1 Tbsp skim milk
  • optional add ins:  ham, turkey or chicken
  • salt & pepper to taste

What I did:

  1. Preheat oven to 375 degrees and prepare your muffin tins
  2. Whisk eggs and milk together and seasoning
  3. Add in the cheese and spinach
  4. Pour mixture to the top of muffin cups
  5. Bake for approximately 15 minutes, or until egg is done in the center

Three reasons why I love this recipe…It’s perfect for my entire family!

My son loves anything that looks like a muffin.  I think his sight over rides his tastebuds when it comes to  muffin/ cupcake shaped food  sitting on his plate.  This makes me very happy because it gives me an easy way of sneaking in foods he would normally push away.

My husband eats a lot of eggs, typically boiled and for a mid-day snack.  So these are a more exciting way of consuming his protein snack.

I try to only eat carbohydrates before and after my workouts.   So this is a perfect high protein, low carb food for me to eat at times throughout my day when I do not need the energy from carbs.

  8. That looks really good for breakfast. I made some type of Spinach Muffins before that also has Avocados and even my picky eater boy loves it. And didn’t know it has vegetables in it. He didn’t have to know. LOL! I feel like making some Muffins now.

  9. Just Pinned this. I love the combination of egg, cheese, and spinach, and have never made something like this in the oven. I LOVE incorporating spinach with omelets, cheese and tomato. I also like adding it to scrambled eggs, and free egg whites.

  46. This would be perfect to make ahead for my husband for work. He leaves at 7ish in the morning and doesn’t like to eat breakfast that early. I can make it ahead and he can warm it up later in the morning to eat.

    I make something similar in a crust-less quiche form, but the only cheese I use in it is Feta cheese. Feta adds a nice salty kick. Your recipe sounds terrific as well! I love how you put them in muffin tins!
